Position Summary:
The Sous Chef is responsible for the effective management, cost control and administration of the kitchen department. The Sous Chef provides a consistent product and experience as well as ensures all staff under direct supervision are focused and demonstrating a Guest Oriented attitude and culture.

Key Duties and Responsibilities:
The Sous Chef is responsible to assist the Executive Sous Chef with overall kitchen operation, ensuring maximum guest satisfaction, through planning, organizing, directing, and controlling the Kitchen operation and administration. Also assists in supervising all kitchen areas to ensure a consistent, high-quality product is produced.
Oversees and supports supervisors, senior cooks, junior cooks and cook trainees when applicable, reports back to exec sous chef/exec chef in a professional and timely manner.
Have a full operational knowledge of all menu’s and cooking techniques required to guarantee the highest possible quality in the kitchen department,
Ensure that all food items are prepared as per standard recipe cards whilst maintaining portion control and minimizing waste.
Maintains high levels of cleanliness, hygiene and tidiness in all areas of the kitchen department in accordance to HACCP regulations trough supervision and team support.
Ensure that food stock levels are of sufficient quantity and quality in relevance to the hotel occupancy.
To ensure that all food products received into the Main Kitchen are of the required standard and quality and that they are stored and rotated correctly.

Should also possess the following SKAs:
Ability to work well in a high pressured environment;
Strong communication skills
Strong leadership skills, ability to motivate teams to produce consistently great food
Adept at working effectively in high energy and busy environments and works well under pressure
Willing and able to work evenings, weekends and holidays
Compensation will be influenced by the successful candidate’s qualification, experience and skill.
