SOUS CHEF

Under the guidance and supervision of the Executive Sous Chef and Executive Chef, and within the limits of
established Sandals Resorts policies, procedures, oversees and directs all aspects of the kitchen operation at the
level of standard and quality established by the company.
Specific Requirements/Duties of the Position Include:
Responsible for the production and preparation of all food items to ensure highest quality at all times.
Primary responsibility is for the outlet to which the Sous Chef is assigned, but must cross-train and learn the operations of other outlets.





Ensure the completion of the market list in accordance with Company quality and quantity standards.
Inspect all perishable food items received for quality.
Monitor dead stock/slow moving items and keep as low as possible to ensure inventory carry forward is kept
at the minimum.
Assist in keeping an up to date standard recipe file for all food items to include bulk recipes, plating
specifications and costing. Ensure that all kitchen team members adhere to same.
Ensure that all kitchen facilities and equipment are in good working order, clean & orderly. If attention is
needed, ensure that Restaurant Manager is made aware of any repairs that are required.
Communicate with Restaurant Manager in regards to daily specials, chef concerns & 86’d items;





Qualifications and Experience:
Demonstrated knowledge of sauce preparation, soup, butchering and all culinary operations.
Basic knowledge of specialties such as pastry work and ice carving is desirable and very essential.
Knowledge of volume production and ability to maintain the highest quality standards.
Effective verbal and written communication skills.
