Vacancy - Restaurant Chef
Key Accountabilities:
  • Provides direction, sets performance objectives and conducts employee evaluations for direct reports
  • Maintains a visible and hands on approach to daily production and cooking
  • Ensures that proper cooking techniques and times are used in all processes
  • Ensures all presentation standards are met or exceeded
  • Maintains ongoing waste control throughout all outlets and ensures proper product transfers are utilized
  • Assists in the development of menu items and special guest requests
  • Assists in standardizing recipes and compliance such recipes to ensure consistency
  • Maintains and delegates receiving, cooking and storage procedures
  • Monitors set par stock levels for various outlets and monitors production according to business level
  • Ensures all food safety guidelines are in place and followed by all team members
  • Oversees and executes regular daily inspections of kitchen storage and production and provides assistance in food and labor costing reports to senior management
  • In cooperation with the Executive Chef, implements and maintains training programs for new hires and existing staff
  • Oversees shift and schedule requirements to meet business demand while ensuring proper cost control
  • Maintains or assists in maintaining all payroll records
  • Ensures that the kitchens and equipment are maintained and cleaned as per policy and reports deficiencies to the Executive Chef
  • Maintains a professional interest in culinary trends and promotes a career oriented attitude to all staff
  • Manages other initiatives or duties as required and assigned
Education and Qualification
Requirements
  • Excellent communication skills in English; both written and verbal
  • Computer literacy in MS Office
  • Minimum 5 year experience as a Sous Chef /Chef de party: multi-outlet and 5 star resort experience; strong banquet and/or catering experience preferred
  • Ability to work and train in a multinational environment
  • Previous experience in all-inclusive and remote or island locations preferred
  • Other languages an asset
  • Criminal record clearance is mandatory
  • Valid Health Card
